Breakfast: Oatmeal, lingonberry jam, apple.
Snack: Unsalted almonds. Black coffee.
Lunch: Leftover squash soup, Skittles.
Dinner: Roasted beets, Barilla Gluten Free rotini, olive oil, kosher salt, pepper.
Dessert: Take a wild guess.
A more carb-heavy day than I'd like. I'm hoping a snow day will give me a chance to make some more balanced dishes.
